Crispy Chipotle Lime Tilapia with Cool Avocado Sauce
Serves: 4
1 canned chipotle pepper in adobo sauce
2 tablespoons adobo sauce from the can
1/4 cup salsa
1 tablespoon lime juice
4 tilapia fillets
4 ounces tortilla chips, crushed
Sauce
1 small avocado – peeled, pitted, and cut into large chunks
1/4 cup sour cream
1 tablespoon lime juice
3 tablespoons milk
salt and pepper to taste
Heat oven to 375F. Grease a baking sheet with cooking spray. Combine chipotle pepper, adobo sauce, salsa and lime juice in a blender and blend till smooth; brush mixture over both sides of each fillet. Spread crushed chips into the bottom of a deep dish; dredge the coated fillets in the chips to coat. Arrange the fillets on the prepared baking pan.
Bake 15 minutes; turn and lightly spray with cooking spray. Continue to bake till golden brown, another 10-15 minutes.
Sauce
While fish bakes place avocado, sour cream and lime juice in blender and blend till smooth. Stir milk 1 tablespoon at a time till consistency is similar to ranch dressing. Season with salt and pepper. Spoon sauce over baked fillets to serve.
Note: Do not skimp on brushing the fish with the sauce. If you think it will be too spicy, use regular salsa. I didn’t use much since I thought it might be too spicy for some folks and it wasn’t’ very flavorful. Another possibility instead of the adobo sauce is to use Tabasco Chipotle Sauce.
